Air Fryer Buffalo Chicken Egg rolls

Macros: Carbs: 24g Fats: 0g Protein: 24g

Ingredients:

- chicken (I used 4.5oz)

- 1 zucchini

- 2 egg roll papers

- Red Hot Wings Buffalo Sauce

Optional:

- Spinach

- Walden Farms Chipotle Ranch Dressing

Instructions:

1. Shred the chicken.

2. Peel/Slice Zucchini. I used a peeling tool to shred down the zucchini. Then cut strips into small pieces.

3. Mix together the chicken and zucchini with Red Hots Wing Buffalo Sauce in a bowl.

4. Place egg roll paper in water to soak until softened. Don’t leave in for too long or they will fall apart.

5. Take egg roll paper out of water and place on flat surface. Place your filling in the center. Grab one corner of the paper and bring to the middle. Take two outside corners and fold toward middle. Roll forward until the corner that is left is stuck to the roll. Repeat for second roll. There will be left over filling. See step 7.

6. Place in air fryer at 375 degree for 10 mins. Flip the rolls over after 6 mins, then let it finish out the rest of the time.

7. With the left over filling, place in a preheated frying my pan. I added in some spinach for volume and bc I love veggies. Let it cook long enough for the zucchini to soften and the desired spinach density.

8. Place the two rolls on a plate and add in your fixing “salad mix” and you’ve got yourself a bangin💥 meal.
